I found this flour recently in my local Intermarché (la Châtre in the Indre). It is produced by a local mill, so if you do not live in the immediate area, you may need to see if your local mill has anything similar.

I have so far made bread and pastry using this flour with fantastic results mixing with gluten free flours to produce greatly reduced wheat recipes. See below for the recipes.

• Wheat and gluten free Yorkshire puddings (yes, I know they are not French, but some of you may be missing a decent yorky-pud and these are as good as wheat flour ones) coming soon

• Wheat and gluten free vegetarian gravy (can be made more tasty if your not a veggie, but it's still pretty good).

• Wheat and gluten free batter for onion rings (or fish and other vegetables) added 1 Nov 2007
